What we love: When it comes to South and Central American coffees, we typically think of caramel, chocolate, and nutty flavor notes. When these coffees also include some citrus and fruity notes it is something special. 

Why we are excited about it: This coffee had a high cupping score and it's apparent in the clarity, balance, and flavor. In fact, you can leave out the cream and sugar and enjoy this coffee black! 

How we recommend brewing it: We love manual brewing methods at home. This coffee is brewed up beautifully in a Chemex or other Pour Over brewer. Drip coffee makers work great too, just be sure to do a thorough cleaning on the inside first, especially if you've recently brewed a dark coffee or flavored coffee.

Buying/Storage Tips:

If you have a quality grinder at home that grinds fairly evenly (we prefer conical burrs) we recommend purchasing whole bean coffee because it will stay fresher longer. Grind your coffee (or we can for you) for the application i.e. Course (like pretzel salt) for French Press, Chemex, and Cold Brew; Regular (like kosher salt) for Drip or Pour Over; Fine (like table salt) for Espresso and Aeropress. Only purchase as much coffee as you can use in 1-2 weeks to maintain peak freshness.

The bag provided has a one-way valve and is ideal for storage when closed properly. The valve allows the coffee to release CO2 and at the same time protects it from other kitchen odors and light. We do not recommend it, but if storing in the freezer is necessary, place bag inside sturdy airtight container to protect moisture levels and protect from odors. 

 

Recipes:

Crafting your perfect recipe is easy when you understand some of the basic factors which are ratio, grind, and time. First, determine the volume of the coffee vessel you are brewing into. This is best achieved using a kitchen gram scale that has an automatic shutoff longer than 20-30 seconds like this one. Once you know the weight of your water in grams, you can use the 1:18 ratio recommended by the Specialty Coffee Association and calculate your ideal coffee weight (free ratio calculator here).  Brew using filtered water just off the boil. Brewing time should take around 4-6 minutes. If it takes much longer, use a courser grind. If it brews much faster, use a finer grind. From there you can make adjustments to your coffee weight depending on your preferences. 

 

Flavor Notes:

We believe taste to be highly subjective. So we purposefully leave off flavor notes for you to discover yourself. That being said, there are some flavors that are broadly perceived from certain varieties, growing regions, and roast profiles and we offer these in our color code as a general starting point. From there, use a flavor wheel like the one from the SCA to pinpoint specific flavors. Share with us what you taste!
